Easy Farmhouse Omelet with Sheep Cheese and Fresh Herbs

Ingredients

5 fresh egges
1 -2 tablespoons milk
2- 3 oz traditional sheep´s milk brined cheese ( similar to feta but creamier and less tangy )
Fresh green onion tops, chopped and fresh dill
1 tablespoons olive oil/ butter/ neutral oil
Optional a few extra crumbles of the fresh sheep/ goat – chees
Salt to taste if needed.

The Method

Beat the eggs

Crack the eggs into a bowl. Using a whisk or hand mixer, beat the eggs for about 30–60 seconds until well combined and slightly airy.

Add the milk and whisk briefly to combine

Add the cheese and herbs

Add the cheese, green onions, and dill. Mix gently for about 30–60 seconds until evenly distributed.

Cook the omelet

Heat a skillet over medium heat and add olive oil. When hot, pour in the egg mixture. Do not stir. Cover with a lid and reduce heat to medium-low. Cook slowly to keep the omelet soft and fluffy.

Finish cooking

Cook until the top is set and no longer runny. Turn off the heat and leave covered for 2–3 minutes. Add extra cheese on top if desired, cover again, and let it melt gently from the steam for 2- 3 minutes
