Ingredients

2 mixing bowls
1 bowl half-filled with cold water
Fresh heavy cream (30% fat or higher)
Hand mixer
2 wooden spoons
Optional: pinch of salt

The Method

Step 1: Whip the Cream

Pour the cream into a mixing bowl.

Using a hand mixer, beat continuously for about 11–12 minutes.

At first, the cream becomes thick and fluffy.

Then you will notice the fat beginning to separate from the liquid.

Keep mixing.

Step 2: Let the Butter Form

After another minute or two, the butter solids will fully separate from the liquid.

Once the butter has clearly formed, stop mixing.

The remaining liquid is fresh buttermilk.

Step 3: Move Butter to Cold Water

Remove the butter and place it into the bowl of cold water.

Gently knead it with your hands for several minutes to release any remaining liquid.

If desired, add a small pinch of salt.

Step 4: Shape the Butter

Transfer the butter to your work surface.

Using two wooden spoons dipped in cold water, gently shape the butter into a block or mound.

Wrap in parchment paper and refrigerate for 2 hours before serving.
